I'm on Island #11, but it seems like I'm missing so many items. :(
1. SKULL ISLAND - I have finished, but I need to "sacrifice 10 bones for the idol" and I only have 7 left. I have looked everywhere. I have defeated everything. I can't find anymore.
2. FROZEN VALE ISLAND - "30 shells to unlock chest." I only have 28 and have looked everywhere.
3. 7 COINS - I have 6, but I'm not sure if I've missed the 7th or I haven't gotten to it yet.
4. I only have access to 11 buildings, the last being the LABORATORY. Should I have more?

You don't have to start over, all items are there, so all you need is to revisit previously completed islands and search more.
1. Idol might be helpful in dfeating Shade but since you already completed that level you don't really need that idol.
2. Maybe they are a bit tricky to find, but they are all on that level
3. If you tell us which one particular coin you've missed we will tell you where it is.
4. If you are on level 11 this is less than half of the game, so yeah, there will be more on later levels.

If the Idol helps with the Shade, then I desperately need it. I got to the end of island #11 (Cradle of the North) and it was an absolute massacre. There were so many Shade minions and Shades that it was impossible. I have to start over on that island.
I'm wondering if I should do the "Lonely Iceberg" island first. Would the ice tower help with defeating the Shade?

That idol helps with Shade only at Skull Island, it has nothing to do with Cradle of the North, on Cradle of the North there are other idols that will help you.
You can do Lonely Iceberg but I an not sure if ice towers will help you with shades much. To defeat them - make several towers at choke point where they enter your base and make as much troops as possible. Make 5 or 6 shaman tents if you can.
